Gnocchis with tomatoes and mozzarella

Well, what a surprise right? Yes it is me, I’m back! I can’t believe how fast time flies but we really enjoyed the time we had in France hence my desertion here and even if we’re still there, I’m writing again and I’m cooking again, I’m also slowly working again… Seems like holidays are quite over. School will start again soon and I might as well go back on track right now and slowly than fast at the last minute. Living the slow life, enjoying the softness of time; that is what life is about. About that softness, here are my gnocchis, they might look heavy but they are absolutely soft inside when you eat them… Shall we?

So, first part of this recipe is about making gnocchis.

Serve 2 or 4. 500g potatoes, 125g flour, 1 egg yolk and salt, pepper.

Prep: 5mn — Cook: 30mn — Cool: 10mn

Rince your potatoes and put them in a pan with salty boiling water. Cook them for approx 30mn, put a knife into each one and if it is easy, they are cooked. Put them on a plate and let them cool 10mn.

Peal the potatoes and put them in a large bowl, mash them. Add the flour and the egg yolk and mix everything together. Add salt and pepper to your taste. you have your gnocchis dough.

Put some flour on your kitchen counter and start “gnocching”; take a teaspoon of dough and roll it, look at my picture, they should look like that. Roll them all on a fork to make the gnocchis ridges. They are ready to be cooked…

Now is the second part.

Serve 2 or 4. 400g gnocchis (or the recipe you have above), 7 tomatoes, 1 mozzarella, thyme, olive oil, salt and pepper.

Prep: 5/10mn — Cook: 10 + 20/25mn

Put a pan and add water in it along with salt, make it boil. Once it is boiling, add your gnocchis, when they come back to the surface they are cooked. During their cooking time, rince your tomatoes and cut them in pieces.

Preheat the oven to 180°.

Take a gratin or quiche plate, and put your gnocchis in it, distribute the tomatoes and mix. Cut the mozzarella in slivers and add it on top of your plate. Distribute olive oil, salt, pepper and sprinkle with thyme.

In the oven for 20 to 25mn.

So, what do you think about this yummy plate? I found it on Chefnini’s blog, when I want to find inspiration I usually check her blog because it is amazing. This plate is as amazing as it looks so I just can not not recommend it.
