The other day I posted a recipe that I found in March issue of Jamie Oliver magazine, the ultimate chicken and leek pie. Today, I post another recipe that I found in a Jamie Oliver magazine but in the April issue, it is a recipe by Dan Doherty; it is so simple yet so yummy that I had to share it with you. When I saw it, I knew that I had to try it and once tried I was like “uh, how is it possible that I didn’t think about it before?”. It is a really good recipe exactly because it is simple, it is the proof that simple is delicious.

Serve 4 with a salad or 2 if you are with a food lover. 2 big potatoes (350g each), olive oil, 150g lardons (or streaky bacon if you don’t have lardons), 80g grated cheese, herbs if you like them, salt and pepper, 4 eggs.

Prep: 5 to 10mn — 1h30 + 15mn

Preheat the oven to 180°. Clean your potatoes, prick them with a fork and put them on an oven tray. Put the tray in the oven for about 1 hour/1 hour and a half. The potatoes should be cooked inside (prick a knife and it should go through the potatoes easily) and gold. Let them cool while you prepare the inside.

Put a pan on a medium heat and add a dash of olive oil. Slice your streaky bacon to look like lardons and add them to the pan (or add the lardons, of course). Once cooked, put them in a little bowl.

Take your potatoes back and cut them equally lengthwise. With a tablespoon, take off the inside of the potatoes, and let only a 5mm edge. Add the potatoe you just take off to the bowl with the lardons, add a third of the grated cheese, herbs, salt and pepper. Mix everything and you have your inside.

Put the potatoes back on the oven tray. Add the yumminess of your bowl equally inside your potatoes. Dig in the center and add an egg to each potato. You can now add more grated cheese. Put in the oven for 10 to 15mn, until the egg is cooked but still running.

So, what do you think about this simple, very simple recipe? I admit, it takes time to cook the potatoes but you can do whatever you want during this time so, it is quite nice. That is actually what I like about this recipe, you don’t have much to do, the oven practically do the job and mixing potatoes, lardons, cheese everyone can do that. Tell me if you try them :)
