Salad inspiration #9

I hope you’re doing fine, I bet you enjoy the sun as much as I do. I can’t wait for the holidays to enjoy it outside and not inside, working. Some of you may already be on holiday so I just have one thing to say to you: enjoy for the rest of us :)

I was in a rush yesterday, we ran late, le Barbu had to go to work and I was super multitasking: bread, crepes, meal for the evening and the day after. I often have to prepare a meal for 2 meals because I eat at school, so even if my man works I have to make it for 2. In France we’re really lucky for the lunch break, we usually have between 1H or 2h to eat so you have the time to eat something fancy but here, with only 35mn I have to cook something that I can eat quickly: a stir fry that turns to be a sald the day after is the perfect meal, you just need to add a vinaigrette the day after if you’re not going to be able to reheat it.

Quantity of ingredients depends on what you choose, I’m just giving you an idea, not a proper recipe here.

Potatoes, streaky bacon, eggs, crème fraiche. Optional vinaigrette (olive oil, balsamic vinegar, mustard).

Dice the potatoes and put them in a frying pan with a nice slice of butter and let them there until they are tender. Cut your streaky bacon into slivers and add them to the tender potatoes. In a bowl, break some eggs and add crème fraiche, whisk. Add the eggs and crème fraiche to the pan, mix in to make it like scrambled eggs and that’s it. You’re done!

The day after, if you want or have to eat your meal cold, as a salad, add a vinaigrette and you’ll be ready.
