Leeks and potatoes cream soup

I’m writing here again, I wrote on the French blog but didn’t had the time to translate into English and here it is. Wales is well known for leeks, they even have challenges to see who’s going to eat it faster, we manage to find recipes so we won’t get tired of leeks and this recipe is one of my favourites. A cream soup is something really nice, a nice softness for our taste buds and easy to make.

Something classic, simple and delicious. What else?

Serve 2: 50g butter, 3 leeks, 2 potatoes, salt and pepper, water. If you like spices, of course you can add them.

Prep: 5mn — Cook: 25/30mn

Slice the leeks, peel the potatoes and cut them in cubes. Clean them with water quickly.

Put the butter in a pan with high edges and let it melt, add the vegetables. Allow 5mn to cook them, add water until vegetables are covered. Allow 25mn to cook, on a low heat.

25mn later, vegetables are supposed to be cooked, you just need to add salt and pepper, spices if you want. Blend them all together, I did it with a hand mixer and it went pretty well.

Bread crusts, toasts or just bread will be very lovely with this recipe. I hope you’ll like it, des bisous.
