Apple crumble cupcakes

Apples are the fruits I buy the most: easy to take/find/clean, full of vitamins, substantial… I’m not teaching you anything. I’ve learned something really strange here, apples have an expiry date. Wait, what? Yes an expiry date for apples. Well, okay, I had apples and they were expired but looked fine so no way I’ll throw them and I found this recipe bingo! Apple crumble cupcakes, tasty and healthy… What else?

_dsc3519Make a dozen: 200g apple compote (the recipe is here), 150g butter, 150g brown sugar, 150g flour, 1tbsp cornflour, 1tsp baking powder, 3 eggs.

Prep: 10mn — Cook: 30/35mn — Cool: 10mn

Make your compote or buy 200g. Keep it.

Preheat your oven to 160°. In a mixing bowl, put the diced butter, brown sugar and mix with a hand mixer. Add the flour, cornflour, baking powder and mix. Add the eggs, one at a time and mix every time you add one. Add the compote, mix. Pour in muffin moulds and hop in the oven for 30/35mn.

You can stop here and you’ll have delicious apple muffins but what if you carry on?

Make your crumble: 1 tbsp flour, 1 tbsp brown sugar, 1 tbsp soft butter (2tbsp oats are not necessary but will add taste to your crumble)

Mix with your hands, make it into sand and bake for 10mn at 160°.

Make the top: 200g mascarpone, icing sugar.

Malaxez avec les mains, sablez et faites cuire 10m, à 160°.

With a hand mixer, mix the mascarpone and add as much sugar as you like.

Now’s the time: allow you muffins to cool a little, dress them with mascarpone and sprinkle with crumble.

Oh, we’ve eaten a lot of cupcakes with this recipe… Will you?
